Do you love to eat? Do you have some favorite recipes tucked away? Then as easily as that, you can help a lighthouse. Jim & Ann Coombs of Cape Annie's Lighthouse on Cape Cod published a cookbook two years ago titled, Lighthouse Preservation Is Alive & Cooking which was a collection of recipes from their customers and friends. 50% of the proceeds were donated to Race Point. The cookbook sold for $9.95 and $5.00 of that went to the lighthouse. Now they are attempting Vol II and they have chosen Sandy Neck LH in Barnstable to be the recipient. Sandy Neck Restoration Plans A minimum of 150 recipes is needed to go to publication, and a lead time of 8 weeks is needed for production. Jim would like to have a total of 200, which would allow the cookbook to retail for $11.95 with $6.00 going to Sandy Neck. To make this work, the cookbook would need to be ready to sell during the peak season of summer and fall, 2007. Currently, 90 recipes have been submitted, so 200 is a reachable goal, if we join forces. Jim has said that if we here on the Forums become a good source for the recipes, then there will be a Vol III and we can choose the beneficiary. Here are the guidelines: - Send Jim & Ann five or six of your recipes. - Earlybirds will have front placement in this nationally distributed cookbook. - Mail your collection to: CAPE ANNIE'S LIGHTHOUSE 685 Route 6A East Sandwich, MA 02537 Jim will post updates on the count as they come in. Can we, members of the HL Collector Forums help push this goal over the top? If you're into cooking, this should be really easy. If you just simply like to eat, it still should be easy. How about some of your Mom's favorites? Sitting at your computer, YOU can make a lighthouse preservation fundraiser successful. Let's get these recipes sent to Jim, today. Thanks for helping! Judy Castleberry P.S. You might want to post and let us know you are participating.

Terrific idea and for such a good cause! We all cook - well, some of us moreso than others. I will start hunting for some of my favorites; my stash is right here by the computer so I should be able to do that in between working on the book !
I'm in - this is an easy way to help. Anyone else? I'll post as soon as I have all five recipes ready to go.

On Friday, July 28th, we were told by a member of the Sandy Neck Restoration Committee that the paperwork was being signed, and the check being mailed to the foundry in Michigan that is making the new lens housing. Their estimated construction time is 6-8 weeks. It will arrive to Cape Cod in pieces. Scaffolding will be set up aroung the tower, while volunteers piece the lens housing together.
The railing around the outside had been almost completely rusted away, but has already been repaired by a welder.
The committee hopes to have the lens housing installed this fall. The relighting timetable has not been set.

You know, as we get a little older, we forget little things - in a BIG way!! So I wrote up my recipes and got them all ready to go - and then didn't mail them! So they will go tomorrow. Hopefully, this will serve as a reminder to others to get theirs in the mail, too.

15 recipes in so far from CF members. No need for anyone to ask if we "need" more recipes. All recipes will be accepted, as there is no such thing as "too many." It justs means a bigger and better cookbook.

Sorry Folks,
This is one topic that I am unable to make a contribution. If it can't be nuked, I don't even buy it at the grocery store.
To be totally honest, I have never even turned on my stove or oven.
Of course, I guess I'm not the only one -- not too many men have submitted anything. :p

For guys like Bob, or girls, who only nuke or eat out...how about asking a relative, friend or neighbor for some favorite recipes? Or, ask the chef at your favorite restaurant for a contribution. We are well on our way with 15 new ones received, but Jim needs a LOT more before he can go to press. Thanks to each of you who have sent recipes in to Cape Annies. Now lets get some more sent! I just know the folks here on the Collector's Forums can get this project going. Thanks all, and Jim, thinks for the update. Judy

Here's one I made up. Feel free to use it or not. Kids will like it for a party.
Watermelon Jello Bowl
Seedless Watermelon Watermelon flavor Jello (1-2 packages depending on the size of the melon)
Cut a seedless watermelon in half lengthwise. Using a melon baller, scoop out the watermelon and set aside. Clean up the inside of the remaining 'bowl' so it is fairly smooth inside.
Make up Watermelon Jello as per directions (follow the quick-set directions which uses half hot water and half cold water.)
Place the melon balls inside the watermelon bowls and pour the Jello over the melon balls. (These will float to the surface.)
Place in refridgerator for about 24 hours until very firm.
Just before serving, slice the watermelon into 1" slices. Top with Cool Whip if desired.
Alternatively, scoop out individual servings from the watermelon bowl.
Great for pot-lucks and picnics, too.

That's a pretty cool recipe, John. Want to email that up to Jim at Cape Annie's to be included in the cookbook? Capeannieslight@aol.com Thanks! Now that you've set a good example for the guys, I bet there are some fantastic outdoor grill recipes some of our members could contribute. And more from John's idea... Church pot luck suppers? Favorite picnic dishes? Tailgate recipes? Judy

Maybe I should have named it "Jiggly Watermelon" After it sets, the watermelon balls remain "crunchy".

I buy a prepared "Seafood Salad" from the deli counter. It usually has the "Krab" meat, shrimp, fish and sometimes lobster bitgs, celery, green onions and some sort of "base" that the deli uses.
I like to eat that out of Cantelope bowls or with chunks of melon or cantelop. I tried topping a grilled burger with a slice of lettuce and a scoop of the seafood salad a couple of nights ago. Not really a recipe, but it was very good IMO. Might be a nice 'nautical' touch to a beach cookout.

Bringing this back to the top. We still need your recipes. How about some Fall favorites or holiday favorites? If you don't cook, please ask someone who does. Instructions are in the first thread. Thanks to each of you who have sent some in! Judy

Thanks Debbie! Good work. I attended a family picnic yesterday (our annual pumpkin picking get-together ) and got promises from a couple of those attending that they would email me their recipes. I'll probably need to prod some more, but maybe... One of the uncles always brings his chocolate chip pie(s). They are so...ooooo good! Judy
